    Meaning ‘forever’ in Welsh, AmByth is owned by Philip and Mary Hart. Philip, a Welsh ex-pat, traveled the world before landing in California. From the beginning, the Harts knew they did not want to farm conventionally but at the time “organic wine wasn’t doing it for us.” In 2006, AmByth became the first Demeter certified winery in Paso Robles. They are also unique in that the vines are 100% dry-farmed and head-trained. Thirty percent are planted on their own rootstock. The total area planted is approximately 20 acres and soils are sand and limestone. All wines are foot stomped and made with native yeasts only. Biodynamically grown grapes

    Orange blossom and membrillo lend a tropical note to this wine, which also tends towards the exotic with cardamom and coriander seed. Citrus still drives the acidity and it finishes savory. Full bodied.

    A strong core of minerality with bright acid. Yellow apple, apricot and floral flavors lead to a finish that brings out tangerine and other citrus.

    The only wine not made from grapes on the Estate. The Bailey Ranch is located off Peachy Canyon Drive in Paso Robles and is dry farmed organically by the Bailey family. An old fashioned California Zin, with earthy and peppery flavors – more white than black. Crushed berries and a general brambly nature round out the palate.

    Textbook Mourvedre nose – gamey notes, plum and cherry. On the palate there is more cherry with the addition of raspberry, red plum and leather. Soft and velvety with a slightly chewy texture, it is broad in the mouth and thoroughly balanced.

    Based on the one-acre PlayGround vineyard, this blend is meant to be a unique representation of this plot of land on the AmByth estate. West facing (towards the ocean) and thus cooler, all grapes are picked at the same time, creating a challenging harvest decision for Philip each year.
    Spice, plum and cherry notes drive the palate and mouthwatering acidity balances a touch of earth on the finish. Juicy and refreshing and still plenty of complexity and subtlety.

    Plummy and soft with additional earthy and minerally notes. A touch of black pepper and leather, and acidity that lengthens the palate but doesn’t dominate.
