    At 28, Charles Dufour is young for a winemaker, but especially so in the traditional region of Champagne. This hasn’t stopped him from quickly and aptly taking over from his father Yves and producing some rather impressive results. He started by converting the vineyards to organic viticulture and simplifying cellar work. Organically grown grapes.

    Composed of the first and second press | Fermented with native yeast only | Élevage on the fine lees | Disgorged without sulfur | Tirage of organic cane sugar | 2 g/l dosage | Labeled with disgorgement date
    Although labeled as a non-vintage, this wine is made with fruit solely from the 2010 vintage. Rich with almonds, yellow apple and peach, it also includes notes of brioche and spice. Its dryness and acidity is essential to the wine’s ultimate balance and finesse.
