    Sébastien Riffault is a natural winemaker who refuses to sacrifice quality for principal. His grapes are organically grown, plowed by horse and hand harvested. Aged 26, he is gradually taking over from his father and currently farms five hectares of land broken up into several different vineyards. Biodynamically grown grapes.

    Its amber color and aromas of apple skin and yeast bely the freshness on the palate, which follows with notes of citrus, herbs and smoky mineral. Serve at cellar temperature with aged goat cheese, spring rolls or roast pork with a spice rub.

    100% Sauvignon blanc
    With the Quarterons cuvee Sébastien has produced an aged-worthy Sancerre that also drinks well young. Expect golden apples and dried fruits balance with lime zest and minerality along with a rich yellow golden color. Pair with toasted bread rubbed with raw garlic and topped with fresh goat cheese, or risotto with green garlic with mushrooms.

    This is classic Sancerre with a twist: the expected flint and herbaceous notes balance secondary flavors of yeast and walnuts. Wildflowers surround the vineyards in Spring and Summer and they provide an unexpected but fitting complement to the wine. Pair with roast chicken or whole fish baked with olives & herbs.

    .5 hectare plot | 30 year old vines | 15% slope | 35 hl/ha yields | Fermentation and 18 month elevage in 8-15 year old barrels
    Heady aromatics of raspberry and spice leap from the glass and emerge elegantly on the palate. The added complexity of savory notes make it a great pairing with charcuterie, bone marrow or grilled salmon.

    .5 hectare plot | 40 year old vines | 35% slope | 25 hl/ha yields| Fermentation and 18 month elevage in 8-15 year old barrels
    Flavors range from ripe cherry, to earth and spice while ending with a long finish, balanced with acid and enough structure to support the full mouthfeel. This wine would pair well with gnocchi in a sweet tomato sauce, grilled vegetables or beef stew.
